So naturally, I decided to combine my two absolute pleasures - a freshly baked fluffy, golden focaccia and juicy, shiny California strawberries! You have to try! Recipe below! Music: Night in Venice Musician: Kevin MacLeod #CaliforniaStrawberries #CAStrawberries #BehindTheBerry #MillionWaysToStrawberry #sponsored #focaccia #freshlybaked #breadmaking Ingredients: For the Focaccia Dough: 2 1/4 teaspoons (1 packet) active dry yeast 2 tsp. honey 2 1/2 cups warm water (110°F/43°C) 5 cups (625 g) all-purpose flour 2 teaspoons salt 1/4 cup (60 mL) extra-virgin olive oil, plus more for drizzling 2 tbsp (30 g) butter For the Topping: 1 1/2 cups (280 g) fresh strawberries, hulled and halved ½ cup (90 g) chopped basil Coarse sea salt, for sprinkling Instructions: 1. In a small bowl, combine the warm water, honey, and yeast. Allow it to sit for about 5-10 minutes, or until it becomes frothy and bubbly. 2. In a large mixing bowl, combine the flour and salt. Pour in the yeast mixture. Stir until the dough comes together. 3. Grease a large bowl with 1/8 cup of olive oil and place the dough ball inside. Cover the bowl with a clean kitchen towel or plastic wrap. Allow the dough to rise in a warm, draft-free place for about 1-2 hours or until it has doubled in size. 4. Grease a baking sheet or a rectangular baking pan with olive oil. Punch down the risen dough and transfer it to the prepared baking sheet. Gently stretch and press the dough out to cover the pan evenly. Cover and let it rise for another hour. 5. Preheat the oven to 425°F. Once the dough has doubled in size, uncover and pour the rest of the olive oil on top of the dough. Using your fingers, make indents all along the focaccia. 6. Scatter the sliced strawberries evenly over the focaccia dough. Drizzle a bit more olive oil over the top and sprinkle with a pinch of coarse sea salt. 7. Bake in the preheated oven on the middle rack for 25-30 minutes or until the focaccia is golden brown and the strawberries have softened. 8. Remove from the oven and let it cool slightly before slicing. Sprinkle with chopped basil. Serve your strawberry focaccia warm or at room temperature. Enjoy!
