| #ad All hail the perfect make-ahead dessert for holiday hosting season made possible by @Instacart #YuleBeFine Recipe: Eggnog Cream 2 cups eggnog One vanilla bean Half of a fresh nutmeg, finely grated (or 1/2 teaspoon ground nutmeg) 1/2 cup granulated sugar 1/4 teaspoon fine kosher salt 1/4 cup corn starch 2 large eggs 2 large egg yolks 4 tablespoons unsalted butter Cranberry Curd 3 eggs 2 egg yolks 3/4 cup granulated sugar (172 grams) 14 ounces cranberries 6 tablespoons unsalted butter, cut into cubes (170 grams) 1 pint heavy whipping cream ¾ cup powdered sugar 1 store-bought pound cake, sliced into one-inch pieces Directions In a medium, non-reactive saucepan or medium dutch oven (preferably stainless steel or ceramic), combine eggnog, vanilla and nutmeg in a large saucepan or medium dutch oven. Heat on the stove over medium-low until simmering. While the eggnog heats up, combine sugar, salt and cornstarch in a large mixing bowl, then whisk in eggs and egg yolks until frothy. Ladle a small amount of the hot liquid into the egg mixture while whisking. One ladle at a time, continue pouring the liquid in while stirring, until it’s all incorporated. Add the mixture back to the saucepan and cook on the stove over medium-low heat, stirring constantly with a whisk or rubber spatula, ensuring to scrape the bottom. The mixture will thicken all at once; at that point, remove from heat and keep stirring until it looks smooth and creamy. Stir in the butter and strain into a bowl or quarter sheet tray. Press plastic wrap directly onto the surface of the cream and refrigerate until very set and chilled, preferably overnight. Clean the saucepan from earlier and add the cranberries and 1/2 cup of water. Cook, covered, on the stove over medium heat until the berries have burst and are soft. Using an immersion blender, food processor or heat-safe blender, puree the cranberries until very smooth. In a large mixing bowl, combine the sugar and the orange zest, rubbing the zest into the sugar to release its flavor. Whisk in the eggs and egg yolks until the mixture is totally smooth. Pour in the cranberry puree while whisking and transfer to the stove over medium-high heat. Continue whisking almost constantly as the mixture cooks. Once it thickens (the whisk should be leaving trails) remove from the heat and immediately whisk in the butter until homogenous and glossy. Strain the mixture through a fine-mesh sieve into a bowl. Cover the surface of the curd with plastic wrap and chill. Assemble. Whip the cream with the powdered sugar until it’s thick and holds its shape. Layer the components in a trifle bowl or other serving dish: pound cake, eggnog cream, cranberry curd, whipped cream.
